[*Walnut Series*] Taco Crumble

There are few meals that I absolutely need to have OFTEN, and tacos are one of them!

The taco is one of those meals that you can literally put ANYTHING in it and make it work! As a first generation Canadian, my exposer to tacos growing up was Taco Bell ! I say this, because when I think of what brought me to Taco Bell as a kid was the meat crumble. And let me keep it honest, I love toppings but it’s the crumble that had me.

Now as a vegan, I often pull from the texture of meals I grew up with and apply it to the meals I cook. So, there is no better mimic of texture than walnuts. And to add even more depth to this recipe, I used pinto beans. The combination of the two really give you that texture that would work well with a hard or soft taco. ALSO, there is only like 5 ingredients in this recipe, so go out and make it tonight!

Taco Crumble: (makes for 6-8 tacos)

1/2 a white onion

2 garlic cloves

1 1/2-2 cups of walnuts crushed ( not into powder, ok!?) with food processor or blender

Taco seasoning (or garlic pow., cumin pow., paprika pow. , cayenne pow. , onion pow. parsley flakes, chilli pow. and salt)

1-2 Tbsp of tamto paste and 2tbsp of water

1-1 1/2 cups of cooked pinto beans
