[*Walnut Series*] Eggplant Parmesan Crumble

Have you ever had eggplant parmesan before? Well this is better! lol

Welcome to the Walnut Series where I share with you some great ways to cook with walnuts.

This recipe is delicious, light and honestly, would really be a show stopper at your next summer event or even on to save for a cool fall day.

So there are a few steps to this recipe, but I promise you can make this at home!

Ingredients:

1/2 eggplant sliced

1-2cups of walnuts (unsalted)

med. carrot, half a white onion, 2 garlic cloves, handful of parsley

1 tsp of fenugreek

1 tsp of chilli flakes

salt to taste

tomato paste

tomato sauce

1 tbsp of browning

vegan parmesan

Crumble:

panko, nutritional yeast, garlic powder, dried parsley, vegan parmesan, salt

Bake for 30-45mins and then serve!!
