Watermelon Poke Bowl

So this recipe is apart of my SUMMER MEAL IDEAS which is all on my instagram.

But this meal….:) So refreshing, really delicious and one of the vegan meals that allow lots of room for creativity.

Ok so poke bowls are native to Hawaiian cuisine. It is usually served with raw fish and can be an appetizer or a main. But I really played around with ingredients that for me that brought out the flavours in a new way!

I prepared the watermelon and let it sit for an hour and then baked for another hour. I would recommend letting it sit overnight for best results!

INGREDIENTS: (to season watermelon)

watermelon

soya sauce, mirin, rice wine vinegar, sesame oil

toasted black and white sesame

maple syrup

seaweed flakes

Once the watermelon is seasoned, bake at 350-375 for 45mins to 1 hour. Let it cool and for the leftover sauce, pour it over the watermelon and serve!
